Gluten Free Chocolate Chip Snowballs

A flaky inside with deliciously soft chocolate chips covered in icing sugar is the perfect decadent cookie for this season! 



Yes. I basically just suggested in the post title that you should eat snowballs... But this is a different kind of snowball! It has mini chocolate chips in it, and icing sugar, and vanilla and all kinds of goodies! AND it's gluten free!!! Now you'll have another gluten free Christmas dessert to munch on while listening to Christmas music and reading a delightful book. It'll get you right into the spirit of the holiday. :)

This is also perfect to bring to any get-together's, and everyone will devour them! The perfectly white powdered sugar over the cookies will remind you of all the beautiful white snow outside. But you get to eat this stuff. :) But wait, these will only remind you of the beauty of the snow, not how cold it is. :P



As said above, these are gluten free! Unfortunately I wasn't able to make it completely sugar free, but I did lower the sugar content from the original recipe by adding part normal powered sugar and part sugar free coconut powdered sugar.

One quick tip! Make absolute sure that you add the tapioca and potato starch -- these are super important ingredients for a gluten free cookie. It creates a nice smooth texture that you wouldn't have otherwise. So make sure to include these important starches!


I was really excited to try this recipe, because you use mini chocolate chips! I've never baked with mini chips before, but I have officially fallen in love with them. They're so petite, and absolutely adorable -- and they have a great taste that doesn't 'take over' these cookies, like normal sized chocolate chips would, but they instead add a decadent twist -- and they look amazing. :)


Chocolate Chip Snowballs

Ingredients

1 cup unsalted butter, softened
3/4 cup powdered sugar
1/2 cup sugar free coconut powdered sugar (I didn't add cornstarch this time)
2 teaspoon vanilla
2 and 1/4 cups oat flour
1/3 tapioca starch
1/3 potato starch
1/2 teaspoon xanthan gum
1 cup semi-sweet mini chocolate chips
Additional powdered sugar, for rolling

Directions

Preheat oven to 375 degrees F. Line two cookie sheets with parchment paper. Mix butter, both powdered sugars, and vanilla with an electric mixer until combined. Add oat flour and mix until dough comes together. Stir in the chocolate chips.
Scoop desired sized balls of dough and place on prepared cookie sheet. Bake cookies for 7-10 minutes (I found 7 minutes to work perfectly.) They may not look quite done on the top, but once you take them out and let them sit for one minute, check the bottoms to see if they're slightly browned. If so, pour some additional powdered sugar in a bowl and start rolling the cookies in it.. If they're not done, pop them back into the oven for another 1 or 2 minutes. BE CAREFUL! These cookies burn easily on the bottom, and you won't be able to tell until you pick them up and look.
Place on a rack to cool. Once cookies are cooled, you may want to re-roll them in the powdered sugar.
